    What Are Aromatics? 

    Aromatics are a blend of ingredients such as herbs and spices, and they are integral to layering flavours and infusing fragrances. Many of these spices and herbs are implemented in dishes that are significant to Chinese traditions. From lotus seed pastes used in mooncakes during the Mid-Autumn Festival, to golden crispy spring rolls in the Chinese Spring Festival, aromatics play a fundamental role in Chinese food and traditions. 

    During the cooking process, many of our chefs sizzle aromatics in oil to help release their fragrances, a signature technique when it comes to crafting authentic dishes. 

    Throughout the centuries, it has often been believed that the ingredients we use in food are for the soul and spirit, not just the body.     Aromatics In Our Signature Autumnal Dishes

    During the autumn season, many people in China enjoy celebrating the Chongyang festival, also commonly known as the Double Ninth Festival. Celebrating nature, climbing mountains and valuing spiritual healing, this festival is also widely recognised for its aromatic dishes and herbal teas. Chrysanthemum tea is primarily associated with this festival as these flowers tend to bloom in autumn, becoming a symbol of purity and nobility, as well as fighting off illnesses that affect us during the cold seasons. 

    Aromatics such as ginger, garlic, spring onions and chili are often found in traditional Chinese medicine to support immunity and enhance spirituality – these are key values that reflect the spirit of the Chongyang Festival, which centres on connecting with nature and showing deep respect for the elderly. These fundamental flavourings make up some of our delicious and decoratively presented autumnal dishes! 

    An enticing fusion of garlic, star anise and ginger, Dong Po Pork is a delicious main course option to treat yourself throughout the autumn season. Thanks to its balance of hearty herbs and spices that act as restorative healing properties, this dish ties in with the themes of spirituality and honouring elders at the Chongyang Festival.

    Mongolian Sauce and King Po Chicken is also a wonderful option as a main, with its composition of layered dried chilis, garlic, ginger and spring onions. The aromatic sharpness and energising ingredients make it a great option for the cooler months, this healthy and rejuvenating dish is sure to warm you up.

    The Role Of Aromatics In Our Cocktails 

    Just like our dishes, we use a wide variety of ingredients to create indulgent cocktail recipes that mirror Chinese cuisine too. They can include anything from a layer of teas, flowers and spices to fruits, wines and spirits, all of which give you a bubbling taste of Chinese inspired fragrant beverages. Let’s take a look at some of our gorgeous cocktails that can be paired with our unique dishes. 

    The Jiuzhaigou Hu cocktail, named after the beautiful Jiuzhaigou valley located in southwestern China, is a dynamic blend of Roku, aperitif wine, blue curacao, lemon and bitters. The citrusy sharpness of the lemon blends harmoniously with the floral Roku, making it a great option to pair it with the Dong Po Pork, where the cocktail’s citrus notes contrast nicely with the pork’s richness. 

    A similar option that you may consider is the Xing Fu cocktail, meaning “Happy” in Mandarin Chinese. It’s a delicious combination of Roku, peach liqueur, lemon and raspberry, whose aromatic layers make it a perfect option if you’re one for fruity and sweet cocktails. Combining sweet tastes, fantastic presentation and a positive meaning behind it, this cocktail is sure to make you smile!

    Our Chang’An cocktail is an aromatic blend of Kakuzo Yazo, lychee Liqueur, sake and prosecco. Named after an ancient Chinese city, the Chang’An cocktail has aromatics that not only enhance the cocktail’s refreshing taste, but reflect the ancient Chinese philosophy of using fragrant ingredients to invigorate the senses and support well-being. 

    Matcha In Complementary Desserts 

    Aromatics play an important role not only in Chinese cuisine, but in Asian food as a whole. Our Matcha Oreo Cake combines indulgent flavours of chocolate oreo with earthy matcha powder, originally sourced in Japan. It is a great option to follow your Fillet Steak In Mongolia Sauce or Dong Po Pork, where its light bitterness complements these dishes and brings your dining experience to a satisfying finish.

    Available Sun-Fri, our Mid-Autumn Set Menu includes a starter, main course and a side for only £29.95 and for only an additional £8 you can add a second course or dessert too. If you’re feeling really indulgent you could even opt for both!

    But before we delve into what delicious dishes you’ll find on our new set-menu, let’s take a look at the history of the Mid-Autumn festival and what makes it so special in Chinese culture. 

    Mid Autumn Set Menu

    What Is The Mid-Autumn Festival?

    Also known as the Mooncake Festival or the Moon Festival, the Mid-Autumn Festival dates back over 3,000 years to the Shang Dynasty and its origins are rooted in the worshipping of the moon in the hope of a really good harvest. 

    The ancient Chinese believed that the moon and water were associated with rejuvenation, hence the worshipping in the hopes of a good harvest. For example, the Zhuang people have an ancient fable that describes the sun and the moon as a couple and the stars as their children. Then, when the moon is pregnant, it becomes round (hence the full moon) and then after giving birth to a child (or a star in this instance) it becomes a crescent moon. So you can see how the full moon is associated with new life and rejuvenation, especially with the timing of the full moon during harvest time. 

    People would worship the moon to give thanks for the harvest and encourage the ‘harvest-giving light’ to return during the following year. Whilst today, many people have enough food supplies, the tradition of the festival lives on and over the many years, how and why everyone celebrates has evolved. 

    Today, the core principles of the celebration revolve around three fundamental concepts. The gathering of friends and family to celebrate and ‘harvest crops’. The giving of thanks to the moon for the harvest, which is also represented through the gifting of and sharing of mooncakes to and with one another and finally praying for good things to come in the future (traditionally a good harvest the following year). 

    Whilst regional traditions differ, the festival is usually celebrated by worshipping the moon (families will often eat outside on the night of the full moon), lighting various types of lanterns and enjoying the making, sharing and eating of mooncakes. 

    The Mid-Autumn Festival is the second most important festival celebrated in China after Chinese New Year and is a public holiday there too. This year the festival falls on October 6th and many will be looking forward to a big celebration.

    Our signature deep fried sharing platter is a tantalising appetiser that’s sure to get your taste buds tingling. There’s a wide selection of dishes available, so there’s something for everyone to enjoy. It’s the perfect opportunity to try something new too!

    Our Kataifi Dragon Rolls are a unique and delicious take on traditional Chinese rolls. The mix of textures they provide is simply delightful with crispy, flaky pastry on the outside and juicy and tender king prawns on the inside. The satisfying crunch followed by the juicy, tender taste of the prawns is to die for.    

    Our sesame seed coated Golden King Prawn Toast provides a crispy, crunchy seafood experience. Whilst the luxurious black truffle (which some have described as having chocolatey notes) adds a lovely nutty taste too. 

    If it’s juicy chicken you’re after, our sticky Teriyaki Chicken Skewers are sure to delight. With their irresistible umami flavour bursting through, they’re the perfect blend of sweet and savoury taste. 

    Finally, our Golden Chicken and Cheese rolls have the crispy consistency of a spring roll, but with a tasty, gooey chicken and cheese filling instead. A unique experience that many may not have tried before.

    Dim Sum as a whole includes a wide variety of different dishes from steamed buns filled with rich, tasty meat or vegetables and sauce to fried pastries such as Kataifi Dragon Rolls. However, in our Steamed Dim Sum Platter we provide you with a delectable mix of some of the finest steamed dishes that Dim Sum can provide. 

    There’s the traditional Iberico Siu Mai steamed dumpling dish that features Spanish Iberico Pork wrapped up in a twisty wanton wrapper. The pig’s exclusive diet of acorns and other plant based items gives this meat an evocative, nutty flavour which you’re sure to love. 

    Our Black Gold King Prawn Ha Gau is a luxurious twist on the classic Cantonese Dim Sum. Juicy king prawns are wrapped in a silky black pastry which has been infused with natural squid ink and adorned with a delicate, edible gold leaf resulting in a feast for both the eyes and the palate.

    Our Wild Mushroom Dumpling is bursting with rich umami flavour which combines excellently with the earthy tones of the wild mushroom.

    Interestingly in Chinese culture, whilst Father’s Day isn’t as widely celebrated as it once was, we do celebrate it in line with the rest of the world on the third Sunday of June. But that wasn’t always the case…

    During World War II, the Chinese Government wanted to celebrate our soldiers who’d passed away and honour Fathers who had and hadn’t served. They chose August 8th as the date to celebrate this occasion because that date can actually be shortened to “bā bā” (八八 ‘eight eight’), which sounds very similar to the informal word for father (爸爸, bàba).

    Whilst this tradition has waned over the years in mainland China and any who do celebrate it now tend to celebrate Father’s Day in line with the rest of the world on the third Sunday in June. The original date is still celebrated to this day in Taiwan. Whilst not an official holiday, residents of Taiwan often take their dad out for a meal, give him gifts or at least give him a phone call to catch up.

    Juicy king prawns stir-fried with crispy tenderstem broccoli in a light, aromatic glaze. A refined balance of ocean freshness and garden greens, crafted for  an elegant flavour.

    Rainbow Chicken Fillet with Japanese Curry Sauce

    This dish combines crispy textures, with juicy chicken and a sweet and savoury Japanese curry sauce for a taste sensation that’s sure to leave you wanting more. The tender chicken fillets are lightly battered and pan-fried until golden and then topped with the delicious curry sauce. We recommend pairing this with our fried rice side dishes.

    Aromatic Crispy Duck

    With a crispy outside and a tender centre, our Aromatic Crispy Duck is a tasty dish similarly to our Peking Duck dish, it is an experience, rather than just a meal. Served with pancakes, cucumber, spring onions and delicious hoisin sauce, you’ll combine the ingredients by hand and discover how the combination of the textures and tastes provide a taste like no other.

    Salt & Pepper Tofu

    Our new crispy and spicy tofu dish is bursting with flavours and is a great choice either on its own or paired with one of our fried rice dishes.     We’re delighted to reveal our brand new Dim Sum menu launching Monday, 12th May. With a variety of tasty fillings, each offering a different taste sensation and the option to have either steamed dim sum, deep-fried dim sum, baked dim sum or a mix of all three, we’re offering the ultimate dim sum experience.

    Traditionally served during brunch hours, our Dim Sum menu will be available from 12 noon until 3:30pm every day. Plus, keep an eye out on our social media platforms, and if you like, comment and share our Dim Sum post with three friends, you’ll be eligible for 15% off your order if you visit us between 12th May and 12th June.

    Dim Sum is a collection of small bite-sized dishes that are served with tea and traditionally enjoyed as a brunch or lunch time snack. The type of food served as part of Dim Sum is quite diverse and can include steamed buns (such as Char Siu Bao), dumplings, fried pastries (such as prawn toast and kataifi dragon rolls) and other snacks.

    Dim Sum is presented beautifully in bamboo steamers and it’s the perfect option if you’re looking to share with others or want to try out different dishes. Traditionally in dim sum restaurants, a server would usually push around carts filled with different dishes to choose from, allowing diners to select what dishes take their fancy. However in most restaurants these days, you’d expect to choose from a menu and have your dishes brought out to your table.

    Traditionally served with tea, the etiquette would be for the person closest to the teapot to pour tea for all the guests at the table before pouring his or her cup. Diners would then signal to waiters that they need a tea refill by taking the lid off the teapot and either resting it on top of or by the side of the tea pot.

    Eating dim sum is a very fun and unique experience. With a wide variety of dishes to choose from, each with interesting textures and beautiful flavours that delight your tastebuds, we’re sure it’ll be a pleasant experience that’ll leave you wanting more.

    There’s too much on our new dim sum menu to delve into each and every dish (as you can see in the image above), but we’ll share with you a selection of popular and traditional dim sum dishes that are either a great starting point or favourites that you’ll likely be looking to enjoy once again.

    One of the most popular dim sum dishes, these marshmallow-like steamed dough buns are super soft and filled with sweet and savoury char siu pork that just melts in your mouth. Steamed until the dough is soft and fluffy and the filling is cooked through, char siu bao is a real taste and texture sensation like no other. 

    Siu Mai is a traditional chinese dumpling dish which features steamed dumplings that are enclosed in a twisty wanton wrapper with the filling just popping out of the top. Our Iberico Siu Mai contains Iberico pork, which originates from Spain and is known for its nutty, evocative flavour, which comes from the pig’s diet of acorns and other plant based items which are naturally found within its forest habitat.

    Translated as ‘soup dumplings’, Xiao Long Bao originated in Shanghai and consists of thin, pleated dough wrappers with tasty fillings inside. Traditionally Xiao Long Bao would include minced pork and a broth that could be combined with roe and crab meat, hence the name soup dumplings. Our Iberico Xiao Long Bao contains our tasty Iberico pork which is sure to have you coming back for more.

    Our Kataifi Dragon Rolls are a unique take on traditional Chinese rolls. Filled with succulent prawns and wrapped in delicate kataifi pastry, they offer a delightful contrast of textures — crispy and flaky on the outside, tender and juicy on the inside. Each bite delivers a satisfying crunch followed by a melt-in-the-mouth finish.

    Known as ‘Dan Tat’ in Cantonese, Hong Kong Egg Tarts are small, flaky pastry desserts that are filled with a smooth, creamy and sweet egg custard. They actually took inspiration from British custard tarts, but have their own Cantonese spin on things.

    There’s something for everyone to enjoy on our new Dim Sum menu, from steamed melt in your mouth dumplings to crispy fried Kataifi Dragon Rolls and sweet and delicious Hong Kong Egg Tarts. Our Golden King Prawn Toast With Black Truffle is a real mothwatering treat. The natural umami of the prawns shines through, perfectly complemented by the crispy golden toast, while the black truffle just enhances those flavours.

    Our Kataifi Dragon Rolls are a unique take on traditional Chinese rolls. Filled with succulent prawns and wrapped in delicate kataifi pastry, they offer a delightful contrast of textures — crispy and flaky on the outside, tender and juicy on the inside.     Stir-fried in garlic sauce and served with fresh asparagus, our Stir Fried King Prawns are a popular choice and it’s easy to see why. With their buttery, garlic flavour and chicken like texture, they’re delicious!

    Juicy fillet steak cooked to ‘melt in your mouth’ perfection, served in our sweet and savoury Mongolian sauce with a complimentary side of Steamed Rice or Fried Jasmine Rice. This is a taste sensation and if you’ve never tried Mongolian sauce before, now’s the time. It’s a delicious combination of brown sugar, soy sauce, ginger and minced garlic and we’re sure it won’t disappoint.

    Iberico Pork comes from the distinctive Black Iberian Pig, which is native to central and southern Spain, plus certain areas of Portugal too. The pig’s diet consists of the likes of acorns and other elements found within the natural forest areas where it lives. This diet gives the meat a strong nutty flavour and because they’re bred to have a higher fat content than many other pigs, the pork is delightfully tender. The combination of the salty tenderness and the delightfully sweet lychee sauce is a real treat for the senses.

    A delightful and delicious combination of tender chicken, nutty peanuts and green onions in a tasty sweet and spicy kung po sauce, this is another popular dish here at Blue Pavilion.

    Essentially this means it’s the norm for us to respect our parent’s wishes when it comes to aspects of our lives and ensure they are looked after as they grow older, often having them move in with us if they need help.

    Often described as having a taste of a strawberry mixed with a pear coated in rose water, Lychee fruit has a really sweet and refreshing taste. Much like our sweet and sour dishes, Chicken In Lychee Sauce is a great choice if you’re looking for that delicious, sweet burst of flavour.

    An amazing combination of tender chicken, peanuts and green onions in a deliciously sweet and spicy kung po sauce, served over hot jasmine rice or fried rice, what’s not to like? It really is a great combination and is sure to delight your tastebuds.

    Juicy fillet steak cooked to perfection so it melts in your mouth and served with your choice of either Mongolian or Black Pepper sauce. Mongolian sauce is a delectable combination of brown sugar, soy sauce, ginger and minced garlic, it’s so tasty, whilst our Black Pepper sauce has a lovely sweet, yet peppery taste and compliments the tender steak so well.

    If you’ve never tried king prawns before, now is the time. With their sweet and buttery flavour and ‘chicken-like’ texture, they’re a popular choice. Stir-fried and served with fresh asparagus, it’s a great choice.

    A tasty hybrid of Chinese kale and broccoli, tenderstem broccoli is a fantastic addition to any of your meals as a side dish. Especially when it’s been marinated in our ‘warm’ tasting garlic and ginger sauce.
