    What Is Dim Sum?

    Dim Sum refers to the dining experience that includes small portions of delicious dishes: they’re shared between family and friends, similar to Spanish tapas. Closely tied to the tradition of Yum Cha, dim sum dishes are shared during breakfast and brunch – many people also enjoy tea as a staple beverage with their small dishes. 

    Usually, this culture is commonly shared in Cantonese-speaking locations, including Hong Kong, Macau, Guangdong Province, and parts of Guangxi Province, as well as overseas Chinese communities in Singapore, Malaysia, the United Kingdom, Canada, Australia, and the United States, where dim sum remains an important social and culinary tradition.

    Generally, dim sum covers a variety of cooking techniques, including steaming (We’ll break down more of these key dishes and their ingredients later). Even though dim sum is known as a breakfast or brunch tradition in China, we serve it all day here at Blue pavilion, so you won’t miss out! 

    Dim Sum In Chinese History & Culture

    Dim sum dishes are not only recognised as delicious meals, but also symbols of rituals, social gatherings and kinship. Being an integral part of Yum Cha, it all started during the Qing Dynasty (1644-1912) when travellers and merchants would stop off at local inns and teahouses to rest, drink tea and eat. They were given bite-sized dishes and tea, and they also used this time to pause, reflect and socialise, where the practice of Yum Cha eventually developed into a popular tradition.  

    As time went on, families and friends took part in the tradition of Yum Cha across China, and the love for tea and dim sum dishes had blossomed. This popularity led to little teahouses becoming much larger restaurants, and dim sum became the cornerstone of Chinese tradition.

    Our 3 pieces of IIberico Xiao Long Bao combine the delicate craftsmanship of Shanghai’s famous soup dumplings with the rich flavour of premium Iberico pork. Encased within a thin, pleated wrapper, each dumpling delivers a savoury burst of broth and tender meat in every bite.

    Black Gold King Prawn Ha Gau (3 Pieces)

    If you’re a lover of seafood, our Black Gold King Prawn Ha Gau certainly makes a great option for you. They’re a luxurious twist on the classic Cantonese Dim Sum – they’re juicy king prawns enclosed in black pastry. Presented artfully with edible pansy flowers and opulent gold leaf, you and your loved ones will undoubtedly feel treated to a special culinary experience with this dish.

    One of the most beloved dim sum classics, Char Siu Bao features pillowy marshmallow-like steamed buns that are filled with tender, sweet and savoury barbecued pork.     Refreshing Cocktails

    As a part of our set menu, our special complimentary cocktails make a special treat for you and your friends. Our “Ri Zhong Tian” (日中天) is a citrusy blend of vodka, green apples, limes and soda – certainly a refreshing beverage to cleanse your pallet between courses. This expression literally means “like the sun at its Zenith” which is commonly used to describe someone or something in their prime.

    Another refreshing option is the Qing Yun Zhi cocktail (青云志) that’s made from a wonderful concoction of gin, yuzu, lemongrass and tonic. This poetic idiom means “aspiration to rise into the blue clouds” which refers to high ambitions and the desire to achieve success goes – our way of saying good luck to graduates starting their new chapter.

    Celebration at Blue Pavilion

    Interestingly in Chinese culture, whilst Father’s Day isn’t as widely celebrated as it once was, we do celebrate it in line with the rest of the world on the third Sunday of June. But that wasn’t always the case…

    During World War II, the Chinese Government wanted to celebrate our soldiers who’d passed away and honour Fathers who had and hadn’t served. They chose August 8th as the date to celebrate this occasion because that date can actually be shortened to “bā bā” (八八 ‘eight eight’), which sounds very similar to the informal word for father (爸爸, bàba).

    Whilst this tradition has waned over the years in mainland China and any who do celebrate it now tend to celebrate Father’s Day in line with the rest of the world on the third Sunday in June. The original date is still celebrated to this day in Taiwan. Whilst not an official holiday, residents of Taiwan often take their dad out for a meal, give him gifts or at least give him a phone call to catch up.

    Our Father’s Day set menu features a fantastic mix of tastes and textures to give you and your father a beautiful and memorable food experience.

    There’s our signature deep fried sharing platter that has an eclectic mix of fried food delicacies such as kataifi dragon rolls and our golden prawn king toast with luxurious black truffle. Then there’s plenty of main dishes to choose from to suit everyone’s taste from our rainbow chicken fillet with sweet and savoury Japanese curry sauce to crispy water king prawns in sweet and spicy honey and wasabi sauce.

    Plus, for only an extra £8 per person, you can experience our aromatic crispy duck as a second course. Wrap up the tasty duck with cucumber and spring onions for a taste you’ll never forget.

    Our deep fried sharing platter is the perfect appetiser to get your tastebuds tingling. With a wide selection of dishes included, there’s something for everyone to enjoy. It’s also the perfect opportunity to try new dishes you may not have before too.

    Our Kataifi Dragon Rolls are a unique and delicious take on traditional Chinese rolls. They offer a delightful mix of textures with crispy, flaky pastry on the outside and juicy and tender king prawns on the inside. They provide a satisfying crunch and melt in the mouth experience with each and every bite.

    Also included are our juicy Teriyaki Chicken Skewers which offer the perfect blend of sweet and savoury with their irresistible umami flavour bursting through with every bite. Our Golden King Prawn Toast coated in sesame seeds offers a crunchy, crispy seafood experience. The luxurious black truffle adds a lovely nutty taste too, some have even described it as having slight chocolatey notes too.

    Lastly, the Golden Chicken and Cheese rolls have all the crispy consistency of a spring roll, but with a tasty, gooey chicken and cheese filling.

    The first of our main course choices is the perfect selection if you want to enjoy a sweet and savoury mix that bursts with flavour. Lychee fruit is often described as having a flavour that’s almost as if a strawberry and pear have been combined and coated in rose water. So if that sounds tasty to you, this could be the right choice for you.

    Juicy, tender chicken in crispy batter, mixed with peanuts, green onions and coated in a delicious sweet and spicy kung po sauce, this is a great choice if you’re looking for a crispy and spicy taste sensation.

    Despite the fact that Easter is not formally recognised as a public holiday in China, millions of Chinese christians attend church services and celebrations, and gifts such as hampers and easter eggs are usually exchanged within these communities.  

    In China, the catholic community that celebrates Easter also has a tradition of decoratively painting eggs as a way to celebrate themes such as rebirth and fertility. 

    The most celebrated holiday in China is the Chinese New Year, also known as the Spring Festival, and it typically falls on different dates between January and February each year. 

    While Easter is not a popular holiday in China, we still take joy in creating great experiences for those that do celebrate it. That’s why we’d like to bring our delicious authentic chinese dishes to our UK guests during this time.

    Mother’s Day is celebrated annually on the second Sunday in May in China, and it will be on the 10th May this year (2026). In the UK, Mother’s Day will be celebrated on 15th March. Similarly to the UK, our traditions include gifting our mothers flowers and taking them out to dinner to treat them. During this occasion, we enjoy eating our traditional Chinese meals as we celebrate maternal values.

    Although Mother’s Day is not an official public holiday in China, it has gained a lot of popularity, particularly over the past few decades. Families enjoy coming together as we celebrate our mothers and how they’ve made us into the good people that we are today.

    2026: The Symbol Of The Horse & Yearly Traditions 

    This year, China celebrates the year of the horse. It’s a symbolism of strength, optimism and opportunity, which are all key values we’d like to share at Blue Pavilion.

    The horse is the 7th animal in the 12 year Chinese zodiac cycle, and it’s also associated with fire, symbolic of passion and intensity. People born in the year of the horse are said to be ambitious and full of energy, as well as warm-hearted and adventurous. 

    2025 was the year of the snake, symbolising wisdom and transformation – just like the shedding of old skin celebrating a new one. Last year, many festivals featured snake costumes, decorations and carnival floats. Every year, on the Chinese New Year’s Eve (16th February) the traditions will start with family dinners, fireworks and the Spring Festival Gala. This is the largest TV show in China, where all families gather at home and watch it to say goodbye to the old year and welcome the new one. 

    During the day, big cities and towns in China often see many lively and colourful parades and performances through the streets, featuring dances, carnival floats, as well as outdoor fairs and markets. Many people like to purchase fresh spring flowers as a traditional mark of good luck before the New Year starts. 

    The day also consists of spiritual and religious worship, and many people attend temples to pray and carry out rituals such as incense burning, which is believed to bring good luck and blessings.

    The History Of Chinese New Year 

    For over 2000 years, China has continued its 12 year zodiac cycle that switches from animal to animal, including the Rat, Ox, Tiger, Rabbit, Dragon, Snake, Horse, Goat, Monkey, Rooster, Dog and Pig. Deeply rooted in both astronomy and ancient folklore, this zodiac cycle tells so many stories. 

    Interestingly, the 12 year zodiac is partly based on Jupiter’s orbit as it takes approximately 12 years to orbit the sun, but it can also correspond to the 12 moons that are usually found in a solar year. 

    In terms of folklore, it has been understood that the symbols behind the animals date all the way back to the Jade Emperor, who invited all 12 animals to a “great race” across a river. The first 12 animals that won the race were awarded with having a zodiac year named after them! 

    In China, we celebrate the new year in February as we tend to follow a lunisolar calendar, as opposed to a Gregorian calendar that is used in the west. Each month begins with a new moonphase, so the lunisolar calendar follows this. 

    Key Signature Dishes Celebrated In The Spring Festival

    There are several key dishes that many people love to eat as they celebrate the New Year in China, each holding cultural significance and symbolism behind their cuisine.

    One of the most renowned dishes are Jiaozi dumplings, often made from ground pork, shrimp, ginger and dried pepper, and some vegetarian options usually have finely chopped leeks and shiitake mushrooms. Widely shared between friends and family, these dumplings symbolise wealth and prosperity as they’re said to resemble ancient Chinese gold ingots, a type of currency used in ancient imperial china. 

    Spring rolls are also another common dish that are prepared during the Chinese New Year, often made with various meats, vegetables and a crunchy wrapper. They also symbolise wealth and prosperity, and people share them for good luck as the new year approaches. 

    Changsou Mian is another authentic dish that people tend to enjoy during this tradition. Usually, it’s made with ginger, garlic and vegetables, and the long unbroken noodles are symbolic for longevity and a healthy life.

    Valentine’s Day: Our Traditions In China

    Just like in the UK, we celebrate Valentine’s Day in China on February 14th. The day is celebrated with romantic date nights, an exchange of flowers, gifts, chocolates and lots of delicious authentic Chinese dishes. We also celebrate the Qixi Festival on this date, whose traditions also follow a story of romance. 

    The story goes like this: in ancient Chinese mythology, Niulang, a poor cowherd, fell in love with Zhinü, a fairy and the Goddess’s daughter. They married secretly and had two children. When the Goddess discovered this, she forced Zhinü back to heaven. Niulang followed her using his ox’s hide, but the Goddess separated them by creating the Milky Way – she used her hairpin and slashed it across the sky to magically create our galaxy. The lovers were only allowed to meet once a year, on the seventh night of the seventh moon, when magpies form a bridge across the sky.

    In China, there are common traditions that arise in this festival, such as praying at local temples, indulging in delicious food and partaking in rituals. So, this time of year is certainly about romance, cherishing the time we have together and celebrating our relationship – we want to give you the space to do this in our ambient Blue  restaurant.

    Enjoy Our New Year Eve’s Set Menu At Blue Pavilion

     

    As the New Year starts and spring is just around the corner, we invite you to begin 2026 with an unforgettable experience at Blue Pavilion with delicious and soulful Chinese food. For just £58 per person, you can enjoy an indulgent four-course meal with fine dishes that reflect the celebrations, culture and beautiful landscapes of China. 

    Available on the 31st December, you can enjoy our classic mains such as Crispy Kung Po Chicken and Grilled Salmon Fillet, with fruity and floral house wines. 

    2026 is the year of the horse in China , symbolising strength, beauty and a free spirit – it’s a positive way to begin the new year with these values!  

    Before we dive into what’s available on our set menu, we’ll explore the history and culture of Chinese New Year and what’s involved in this annual tradition. 

    How We Celebrate The New Year In China 

    The Chinese New Year Festival will be celebrated between 17th February – 3rd March 2026. It’s also known as the Spring Festival, where families gather to celebrate – there’s plenty of street parties, fireworks and delicious food!

    Originally, the Spring Festival was a time to pray to gods for good planting and crops during the harvesting season as the warmer weather approached, as well as fighting off evil spirits and monsters by lighting fireworks and dressing up in red costumes.  

    Every year is symbolised by an alternating Chinese zodiac sign that’s an animal or mythical creature, each representative of various meanings, themes and values. 2025 was the year of the snake, with the themes wisdom, mystery, intuition and transformation, whose shedding of the skin is symbolic for new beginnings. In Chinese mythology, Nüwa is the goddess that’s recognised for having a woman’s head and a serpent’s body, with the story that she created humanity out of yellow clay – she embodies new beginnings, wisdom and protection. 

    Next year, 2026 will be symbolised by the horse, with key themes of becoming free-spirited, strong and healthy. So, why don’t we celebrate the year of the horse by enjoying some delicious authentic Chinese recipes?   

    Taste Our Delicious Signature Starter

    In our New Year’s Eve set menu, you can start off your dining experience with a burst of flavour that sets the tone for the rest of the night. Artfully crafted by our skilled chefs, our Signature Deep-Fried Sharing Platter includes Kataifi Dragon Rolls, Golden King Prawn Toast With Black Truffle, Golden Chicken With Cheese Rolls and Teriyaki Chicken Skewers – you’ll be able to experience a varied starter that combines sharp and flavoursome aromatic ingredients. 

    The Kataifi Dragon Rolls are a blend of Eastern Mediterranean ingredients, where the philo dough is finely shredded and becomes crispy and golden when fried. Inspired by Cantonise Dim Sum, our prawn toast has an authentic touch of Chinese gastronomy. Our harmonious fusion of Japanese, Chinese and Mediterranean cuisine will ensure that you start your night in a unique way, setting the tone for the rest of our exquisite dishes and putting a smile on your face! 

    Indulge In A Second Course 

    We love to treat our guests and start the New Year in a fruitful way by offering you a second course that follows up from our starters. Our Blue Pavilion Peking duck includes some fluffy savoury pancakes, cucumber and spring onion, whose origins are deeply rooted in Chinese tradition. 

    Symbolic for prosperity and celebration, duck is widely used in Chinese festivals, including the New Year. We would like to share these values with our guests to wish them prosperity when the New Year begins, as well as being able to have a night to remember.

    Enjoy Our Mains & Side Dishes 

    Our chefs have lovingly crafted our mains that will definitely give you a wonderful experience. Featuring a selection of Crispy Kung Po Chicken, Grilled Salmon Fillet and a Frenched Rack Of Lamb in mint sauce, we enjoy fusing the ingredients of our dishes with European and Asian-inspired ingredients, so we can welcome our UK visitors and make our Chinese friends feel right at home. 

    Using traditional Chinese cooking techniques such as grilling, stir-frying and steaming, our chefs take pride in making our meals taste delicious whilst keeping the nutrients and healthy properties intact. 

    Why not indulge in our gorgeous side dish? Our tenderstem broccoli has a mild bitterness that contrasts beautifully with our main menu options, such as the grilled salmon filet in sweet soy sauce. A tasty side dish that’s on a bed of garlic and ginger sauce, it’s a traditional blend of ingredients that have been valued in China for thousands of years, thanks to their healing and spiritually cleansing properties. So, not only are our dishes delicious, but they’re also made with health, prosperity and abundance in mind.

    Have A Sweet Treat Afterwards

    After you’ve tasted our wonderful mains, starters and sides, you can indulge yourself in a choice of our desserts that are not only loved in China, but also universally across a variety of other cultures. For example, our Oreo Matcha Cake is made with ground matcha, derived from Japan and mainly used for green tea. It’s a gorgeous blend of earthy matcha that’s full of anti-oxidants, as well as layers of rich chocolate and crunchy oreo biscuits. It’s a fantastic way to end the year and invite a new year with plenty of happy memories and positivity!
